In large kettle combine tomatoes, onions, yellow squash, zukkini, bok choy, garlic, escarole ( chop all veg of course) add a box of vegetable boullion. I make Orzo pasta with it and pour soup over pasta with grated cheese. Very good and good for you too. :)
Sat Dec 30 14:42:39 2006 shoots veggie soup recipe and for some reason it really makes it taste meaty, though I'm not sure if that's what you want, lol, but it's vegetarian anyway.
Sat Dec 30 14:46:47 2006 My opinion Soy sauce is notoriously high in salt, so whatever benefits you get from eating the veggies will be negated by the soy sauce and you'll end up with blood pressure a mile high and heaven only knows what else.
Sat Dec 30 16:03:18 2006 My Opinion You say it's "just salt". "Just salt" kills thousands of people yearly, sends thousands more to the ER, and makes health insurance rates go through the roof for the rest of us. Salt is NOT healthy, so don't advocate it. Then LEARN TO EAT HEALTHY!
Sat Dec 30 14:41:01 2006 Heres a Great One 16-3/4 ounces crushed tomatoes
188 ounces water
1 cup chopped carrots
1 cup string beans
1 cup corn
1 cup diced turnips
1/2 cup bell peppers
1/2 cup diced onions
3/4 cup sliced yellow squash
3/4 cup sliced zuchinni
1 cup of chopped broccoli
1 cup of chopped cauliflower
1-1/2 cups of fres asparagus
2 cups of sliced mushrooms
1 cup of green peas
3 cups of cubed potatoes
4 cups of fresh spinach
2/3 cup collard greens
2 cups of great northern beans
2 cups pinto beans
3/4 cup lima beans
2 cups lentil beans
3 cups of kale
1 peeled acorn squash
4 avocados sliced and peeled
I mix all this in my crockpot with the liquid, add salt and pepper and heat up until the veggies are cooked. Pour in a bowl and serve. It is delicius and as you can so, sooooo healthy too.
